style=\"text-align: center;\"><i>2\u202ftbsp<\/i><i>\u202f<\/i><i>water\u202f<\/i><\/p>\n<p style=\"text-align: center;\"><i>1<\/i><i>\u202f<\/i><i>egg yolk<\/i><\/p>\n<h5 id=\"method\" style=\"text-align: center;\"><strong><span style=\"color: #99ccff;\">&#8211; Method &#8211;<\/span><\/strong><\/h5>\n<h4 id=\"fruit-bun-starter-2\" style=\"text-align: center;\"><em><span style=\"color: #ff99cc;\">Fruit Bun Starter<\/span><\/em><\/h4>\n<p style=\"text-align: center;\">Measure out and melt the butter<\/p>\n<p style=\"text-align: center;\">Put the spelt flour, quick yeast, sugar, salt and mixed spice into a bowl and stir to combine<\/p>\n<p style=\"text-align: center;\">Break the egg into the bowl, add the milk and mix everything together well<\/p>\n<p style=\"text-align: center;\">Stir in the melted butter and salt without over mixing<\/p>\n<p style=\"text-align: center;\">Cover with an upturned bowl and leave overnight<\/p>\n<h4 id=\"hot-cross-bun-loaf-3\" style=\"text-align: center;\"><em><span style=\"color: #ff99cc;\">Hot Cross Bun Loaf<\/span><\/em><\/h4>\n<p style=\"text-align: center;\">Rub some butter around the inside of a 1kg\/2lb bread tin<\/p>\n<p style=\"text-align: center;\">Grate the orange rind into the bowl<\/p>\n<p style=\"text-align: center;\">Add the sultanas and glace fruit and stir to make a sticky dough<\/p>\n<p style=\"text-align: center;\">Gather together the dough and knead it briskly in the bowl for 100 presses, it will become less sticky!<\/p>\n<p style=\"text-align: center;\">Dust the work surface with flour, put the dough in the middle and lightly dust the top<\/p>\n<p style=\"text-align: center;\">Cut the dough into 8 equal pieces and roll each into a ball<\/p>\n<p style=\"text-align: center;\">Arrange the dough balls, in two rows of four, in the bread tin<\/p>\n<p style=\"text-align: center;\">Cover the tin with an upturned bowl and leave in a warm place for the dough to rise, for about an hour<\/p>\n<p style=\"text-align: center;\">Pre-heat the oven<\/p>\n<h4 id=\"hot-cross-bun-topping-2\" style=\"text-align: center;\"><em><span style=\"color: #ff99cc;\">Hot Cross Bun Topping<\/span><\/em><\/h4>\n<p style=\"text-align: center;\">For the cross topping, put the flour into a bowl, add the water and stir to make a paste<\/p>\n<p style=\"text-align: center;\">Using a teaspoon, pastry brush or piping bag, dribble or paint a cross onto each bun with the paste<\/p>\n<p style=\"text-align: center;\">Bake for 35 minutes<\/p>\n<p style=\"text-align: center;\">Remove the loaf from the oven, and carefully brush the top of the dough with egg yolk<\/p>\n<p style=\"text-align: center;\">Return the loaf to the oven for a further 5 minutes<\/p>\n<p style=\"text-align: center;\">Take the loaf out of the oven, turn it out and leave to cool on a wire rack<\/p>\n<p style=\"text-align: center;\"><em>Enjoy!<\/em><\/p>\n<p><img
